Pistachio Shortbread Cookies
Mardi Gras and St. Patrick’s Day all in one month? AND it’s almost SPRING! This calls for fatty, green spotted cookies!
Ingredients:
1 1/2 cups all purpose flour
1/2 cup + 2 tablespoons powdered sugar
1/2 teaspoons salt (unless using salted pistachios)
1/2 cup chopped, roasted pistachios
3/4 cup butter, frozen, 1/2 inch cubes
3/4 teaspoon vanilla extract
1 egg yolk
Whisk together flour, powdered sugar, and salt, then add in the pistachios, butter, vanilla, and egg yolk. Mix together well with hands or in a food processor. Roll into a log and wrap in plastic. Let chill in the refrigerator for at least one hour.
Preheat the oven to 325 degrees F. Cut 1/4” rounds from the log and place on an un-greased baking sheet, about 1/2 inch apart. Bake for about 18-20 minutes until light golden.
Makes about 30, 1 1/2 inch diameter cookies.
